How To Make A Yellow Cake From Scratch-With Chocolate Frosting

I still can`t believe my baby is turning 13 tomorrow. I still remember rocking her in my old, wooden rocking chair and tucking her into bed. I still tuck her into bed at night, thankfully, still at her request. "Honey, would you like me to do that for you?" "No Mom, it`s ok, I got this." "Maybe I should stay at the mall with you and your friends as a chaperone." "Seriously Mom? I`m almost 13, I got this." "No blush honey, just mascara." "Who is he?" "Just a guy I know." These are common things uttered in my home these days.
Anyhoo, I thought I`d write a recipe hub on how I made her yellow cake, and chocolate frosting from scratch. Y`all know I`m a food snob right? I try and make everything I can from scratch. This recipe is not my own, it`s borrowed from a woman named Betty. The chocolate frosting is my mother-in-law`s, who got it from her mom, sometime in the 1960`s. My kids are spoiled and won`t touch store bought frosting so I have no choice but to make this. I`m ok with that, it is super delish!
The Yellow Cake
Things you`ll need:
- A large mixing bowl
- A mixer
- 2 cup capacity measuring cup
- 2 1/4 cups all-purpose flour; unsifted
- 1 1/2 cups granulated sugar
- 3 1/2 tsp baking powder
- 1 teaspoon salt
- 1 1/4 cups milk
- Vegetable oil
- 1 stick of butter, NOT margarine, softened
- 1 Tablespoon vanilla extract
- 3 large eggs
Do This:
Preheat the oven to 350 degrees. Grease and flour your baking pan(s).
In a large bowl, mix the dry ingredients until blended well.
Measure the 1 1/4 cups milk in a 2 cup measuring cup and then add enough vegetable oil to bring the liquid to 1 1/3 cups.
Add the wet mixture, the butter, and the vanilla to the flour mixture and beat with an electric mixture, on medium/medium-high for 2 minutes. Scrape the sides of the bowl as needed.
Add your eggs and beat for about 2 more minutes.
Pour the batter into your prepared pan(s) and bake for 20-25 minutes or until an inserted toothpick comes out clean. You can also use the "does the cake spring back when touched in the center" method.
Cool for 15 minutes *and remove from pan(s) if desired, cool for another 15 minutes, and frost as desired.
*I made a 13 by 9 inch cake and didn`t remove it from the pan, I just cooled it and frosted it.
Chocolate Frosting
What You`ll Need
- Mixing bowl
- Mixer
- 4 cups powdered sugar
- 3/4 cup cocoa
- 1/2 cup milk
- 1 stick of butter, softened
What To Do:
Mix the powdered sugar and the cocoa together until mixed well. Add the butter and add a little of the milk a little at a time and mix with the mixer. Repeat until you use all of the milk. If you like your frosting a little thinner just add more milk :)
